Bruschetta with Mozzarella and Tomatoes

Bruschettta with mozzarella is my favorite type of Italian antipasti. This recipe is for 3 people.

6 slices of country bread

3 cloves garlic

3 medium tomatoes

70 gram buffalo mozzarella

small half onion

1 teaspoon fresh basil

1 teaspoon fresh oregano

pinch salt

pinch pepper

3 tablespoon extra virgin olive oil

1.  Toast bread on both sides under the grill or grill pan.

2.  Rub them with garlic.

3.  Put back slices under grill (just for a moment)

4.  Cut tomatoes and mozzarella into cubes, wash herbs. Chop up small onion. Mix all ingredients.

5.  Put above ingredients on bread.

6.  Season with salt and pepper.

7.  Drizzle with virgin oil.
