2 strips of pared lemon zest

1/2 tablespoon minced rosemary

1 tablespoon minced flat-leaf parsley

1 clove garlic (minced)

1/2 tablespoon minced pitted green olives

1/2 tablespoon chopped capers

1/2 teaspoon Maldon sea salt flakes

1/4 teaspoon freshly ground black pepper

16-20 smelts (cleaned and trimmed)

Extra virgin olive oil, for brushing and serving

Lemon wedges and crusty fresh bread, for serving

1.  Soak four bamboo skewers in cold water for 30 minutes. Cut the strips of lemon zest across into very thin shreds, then mince them. Mix with the rosemary, parsley, garlic, olives, capers, salt, and pepper. Set to one side.

2.  Preheat the broiler. Thread the smelts onto the skewers by piercing them through the head. Lay them on a lightly oiled baking pan and sprinkle them with some extra virgin olive oil, salt, and pepper. Broil, 2 inches (5 cm) from the heat, for 2 minutes on one side only.

3.  To serve, lift the skewered smelts into the center of four warmed plates and scatter some of the herb mixture over them. Pour a little more oil around the edge of the plates and serve, with lemon wedges and plenty of crusty bread.
