Broiled mussels with pesto

The Italian easy Broiled Mussels with Pesto recipe is delicious, simple, and really easy to cook.

60 large mussels (cleaned)

A splash of dry white wine or water

2 slices white bread (made into breadcrumbs)


1/3 cup (15 g) basil leaves

2 large garlic cloves

3/4 cup (175 ml) olive oil

2 tablespoons freshly grated Parmesan cheese

2 tablespoons pine nuts

1.  Put the mussels and wine into a large pan, cover, and place over a high heat for 3 to 4 minutes, shaking the pan now and then, until the mussels have just opened. Remove from the heat straight away and discard one side of each open shell.

2.  Tip the mussels into a colander set over a bowl to collect the cooking liquid.

3.  Pour all but the last 1 to 2 tablespoons of the cooking liquid into a small pan and boil rapidly until reduced to about 1 tablespoon.

4.  Put the pesto ingredients and the reduced mussel cooking liquid into a food processor and blend to a coarse paste.

5.  Preheat the broiler. Arrange the mussels on their half shells in one layer on a baking pan and spoon a little pesto onto each one. Sprinkle with the breadcrumbs and broil, close to the heat, for 2 to 3 minutes until the breadcrumbs are beginning to brown.
