Bread Baskets Baked with Paneer Matar Stuffing ( Indian Cheese and Peas Stuffing)

This is one awesome recipe., I adapted from a very traditional snack from India which is traditionally deep is commonly known as "Bread Roll". But me being me..I made the baked version which is more presentable, heart and figure healthy, You can enjoy it guilt free since the portion size is smaller and more filling :). An absolute gorgeous recipe! Let us get started : Required : You need oven, set to prebake at 425f., muffin mould tin(medium size), preferably non stick dark metal. I will attach link to the recipe of cheese and peas stuffing for your reference. The stuffing s simple and can be used in different styles: as in wrap, grilled sandwich, side with Indian bread called roti. This is a great meal for the kids. Please adjust the red chili powder and garam masala if preparing or the kids..or you can kip it too...cumin powder adds good flavor for that.

Ingredients :

Paneer - Matar Stuffing

2 tsp Oil for cooking

1/4 cup Onion chopped fine

2/3 cup Paneer,cubed into 1" squares

can Note : Ricotta or Queso cheese be used too.

1/3 cup Peas

1/4 tsp Ginger grated

1/4 tsp Mustard seeds

1/4 tsp Garam masala

Salt : to taste

1/4 tsp Red chili powder or to taste

1/4 tsp Cumin powder

1-2 tbsp Water : to soften the paneer if it is in very dense state..and will let it absorb the flavors of spice better.

2-3 Steam for minutes.

For Bread Baskets :

2 slices Bread - any kind I used multigrain The bread slices were big in size You may need more bread if using small slices.

in Water a bowl to dip the bread slices to make them slightly wet.

1.  For Paneer Matar Stuffing:

2.  Take a pan and heat up the oil. Add mustard seeds. Stay a little back since mustard seeds are notorious for jumping out.

3.  Add ginger (grated) and finely chopped onions o the hot oil. Reduce he lame to medium and brown the onions slightly.

4.  Now add all the spices. Mix well with the onions.

5.  Add paneer and peas. Coat well with the spiced up sautéed onions.

6.  If you are using the store bought dense/firm paneer, then I suggest that add 1-2 tbsp of water. Mix well. Let simmer for 1-2 minutes with closed lid. The stuffing is ready!

7.  For Bread Baskets:

8.  Cut the 2 bread slices (bigger in size) in 12 small triangles.

9.  Now take 1 triangle at a time and dip it slightly in the bowl of water to make it a little softer.

10.  Press the water out by pressing between both the palms.

11.  Start lining the muffin mould with this triangle. I used 3 triangles to line one medium size mould. This way you will have 4 bread baskets covered with 12 triangles.

12.  Now add 1 big spoonful of stuffing in the center of each basket.

13.  Put the muffin it in the oven at 425*f. Bake it for 18-20 minutes.

14.  Take it out. Let it stand in the mould for 2-3 minutes. Now with the help of a flat spoon or ladle, carefully take out each bread basket. Serve it hot with your favorite dish.

Cooks' note:
The calorie quotient of this recipe is much lower than the original one. We generally use 1 whole slice of bread for 1 bread roll but in this recipe, we can make 2 baskets from 1 slice f bread..amazing :)?
Kids will love it.
You can adjust the spice level to your taste.
Queso or Ricotta cheese cn be used in place of Paneer.
Every basket Requires just 1 big spoonful (soup spoon) of stuffing. You might be eft with extra. You can totally make grilled sandwich, panini style tin the rest.
