This is the most delicous Blueberry Banana Bread around. When I make it somehow it seems to quickly dieappear every time.




ingredients

1 c softened butter

2 c white sugar (or 1 c Truvia Sweetener)

4 eggs

1 tbsp vanilla

4 ripe bananas, mashed

4 c flour

2 tsp baking soda

1 tsp salt

1 pint blueberries (frozen or fresh)

1 tbsp flour

preparation

1.  Preheat oven to 350° Fahrenheit.

2.  Spray 2 9x5 bread pans with cooking spray or Grease with shortening or butter.

3.  In the bowl of a stand mixer, combine softened butter with sugar or Truvia® Natural Sweetener until light and fluffy. Don’t worry if it looks a little grainy, Truvia® Natural Sweetener may mix a little differently than regular sugar, it will still turn out yummy.

4.  Beat in eggs, one at a time.

5.  Beat in vanilla extract and mashed bananas until well combined. Don’t worry about over mixing this part of the recipe, you can mix as well as you want.

6.  In a separate bowl, combine 4 cups flour with 2 teaspoons baking soda and 1 teaspoon salt. Mix thoroughly so that the baking soda and salt are evenly combined.

7.  Fold the flour mix into the liquid mixture carefully, do not over mix as this will make the bread tough and dry. Add the flour until just combined (batter will be thick and heavy).

8.  Toss the berries with 1 Tablespoon all-purpose flour to coat.

9.  Fold the berries gently into the batter.

10.  Distribute the batter evenly into the two prepared bread pans.

11.  Bake in the preheated oven for 55-60 minutes, or until toothpick inserted in the center comes out clean.

12.  Cool in the pans for 10 minutes before turning out onto a cooling rack.

13.  Try not to devour an entire loaf yourself before it has had a chance to cool completely.
