preparation

1.  Create 1 cup of "eyeball mixture," (vodka, olive juice, celery infused water). I used equal parts of each, but adjust it to your own taste.

2.  Mix eyeball mixture with 1 envelope of calcium lactate.

3.  Place into 1 teaspoon molds, add an olive/caper to each, and let freeze.

4.  Create a sodium alginate bath (2 cups of distilled water + 1 envelope of sodium alginate). Also set aside another water bath with just plain water to stop the gelification reaction.

5.  Remove "eyeballs" from freezer and place them in the sodium alginate bath for 3 minutes. Stir to prevent them from sticking together.

6.  Remove with a slotted spoon, and place in a plain water bath or else they will completely gel over.

7.  Now you can assemble your Bloody Tarantula: fill a chilled martini glass with your Bloody Mary & vodka mix, garnish with shrimp (legs) and place the eyeballs towards the front of the glass.
