Blackened Chicken Fajitas

Spicy blackened chicken takes the place of traditional fajita meat in this fun twist on both Cajun and Mexican cooking. Easy and fast - perfect for a weeknight!

1 pound thin sliced chicken breasts *

1 green bell pepper, sliced

1 red bell pepper, sliced

1 medium onion, sliced into half rings

Cajun blackening seasoning (I used Zatarain's)

Olive oil

8 flour tortillas, warmed

Toppings of your choice - shredded cheese, guacamole, sour cream, etc.

1.  1.Brush each chicken breast with olive oil. Sprinkle with blackened seasoning.

2.  2.Heat a cast iron skillet over high heat. Cook each chicken breast a minute and a half to two minutes, until charred and cooked through.

3.  3.Remove the chicken and keep warm. Reduce the heat to medium high. Add about a tablespoon of olive oil to the pan.

4.  4.Add your sliced peppers and onions and cook, stirring occasionally, until crisp tender, about four to five minutes.

5.  5.Slice the chicken and serve with peppers and onions in tortillas with toppings of your choice. Enjoy!

Cooks' note:
* If you buy regular breasts, pound them thin before cooking.
