A Tabbouleh inspired healthy bulgur mint salad with black olives and tomatoes!

300g/10.5oz coarse bulgur

2 ripe tomatoes, finely chopped

100g/3.5oz black olives, pitted

small a bunch of fresh mint, leaves only, chopped

small a bunch of flat leaf parsley, chopped

For the dressing:

2tbsp lemon juice

3tbsp olive oil

salt

preparation

1.  1.Place the bulgur in a pot, cover with hot water and bring to the boil. Simmer for about 15-20 minutes or until the bulgur is ready and absorbed the water.

2.  2.Leave it to cool down.

3.  3.In a mixing bowl, add the bulgur and veggies and mix well.

4.  4.Pour the dressing ingredients into the bowl and mix thoroughly.

5.  5.Serve the salad with a lemon wedge!
