These simple no-bake Biscoff Peanut Butter Balls with mini chocolate chips and coconut are perfect as a pre-workout snack, breakfast, or even dessert!

3 tablespoons whole wheat pastry flour

1/2 cup rolled oats

2 tablespoons unsweetened shredded coconut (Optional)

3 tablespoons vegan mini-chocolate chips (Optional, I used Enjoy Life Brand)

preparation

1.  In a medium bowl combine all wet ingredients using an electric hand mixer.

2.  Add flours and combine.

3.  Add in oats and optional mix-ins.

4.  Roll into balls, approximately one tablespoon each, and place onto parchment lined baking tray.

5.  Refrigerate (or freeze) until firm.
