Basic Grilled Steak

Very few foods are as satisfying as a perfectly grilled steak. Grilling steaks also affers an occasion to gather guests around the grill and give opinions about when the steaks are ready. Remember, if you're in doubt, there's no shame in cutting into a steak to see whether it's done. Makes 4 main-course servings.

1.  Season the steaks with salt and pepper and let them rest at room temperature for 2 to 4 hours.

2.  Build a hot charcoal fire with the coals 3 to 4 inches away from the grill rack. Use enough charcoal to make a double layer large enough for all the steaks. Or, preheat a gas grill to high.

3.  Pat the steaks dry with paper towels and rub them with oil. Estimate the total cooking time, then put the steaks on the grill. Grill for 2 minutes, rotate the steaks 90 degrees to create a crosshatch pattern, and then continue grilling for half the estimated cooking time. Using tongs, turn the steaks over, grill for 2 minutes, rotate them 90 degrees, and then continue grilling until done to your liking. (Don't turn them more than once or you will lose the attractive crosshatch and leave them with random markings instead.)

4.  Transfer the steaks to a warmed platter, arranging them in a single layer. Cover loosely with aluminum foil and let rest for 5 to 10 minutes before serving.
