preparation

1.  Remove and discard excess fat from chicken. Rinse and apt dry. Remove skin, if desired. Sprinkle with salt and pepper. Arrange chicken, bone side down, in center of cooking grate. Place lid on the grill. Cook until meat near bone is no longer pink (30-35 minutes; cut to test).
