Banana Nut Bread Muffins

Like apricot bread and other fruit breads, banana bread is a quick bread, made with a chemical leavening such as baking powder or baking soda instead of yeast. Banana bread batter also makes great muffins. The muffin cups shown here each hold 3 ounces of batter. You can also use larger muffin cups to make fewer muffins. Makes 12 muffins.

6 tablespoons butter (melted, plus more for the muffin cups)

2 ripe bananas

2 cups flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

2 eggs

2 egg whites

1/2 cup granulated sugar

1/2 cup brown sugar

2/3 cup toasted and coarsely chopped walnuts

1.  Use a pastry cutter or potato mashor to mash the bananas.

2.  Whisk together the liquid ingredients, then whisk in the brown and white sugars.

3.  Stir the sugar mixture into the flour mixture, then fold in the walnuts and bananas.

4.  Use a 3-ounce ice cream scoop to transfer the dough into the muffin cups. Bake.
