Baby Corn – Pepper Gravy

Baby corn is one of the special vegetable, healthy pick you can get in most of the grocery shops and local markets. As the name hinted 'Baby', these are produced from regular corn plants and harvested early. Baby corn is a special and popular dish in Asian cuisine. Baby corn can be included in your recipe list in some easy ways such as, in any stir-fry dish, a rice and bean dish, in soups along with other vegetables. Corn has very high nutritional benefits, rich in antioxidants and fibre. It helps lowering blood pressure. Corn helps to decrease the risk of heart disease, cancer and other diseases. As said earlier the Antioxidants found in corn include Vitamin C, E and carotenoids. Achieve your weight loss: Baby corn helps to reduce your weight as it is low in fat but high in nutrition. Good for your Eyes: Carotenoids in Corn are good for eyes, maintaining good vision and power. Improves digestion: Contains fibre which helps for food digestion. Skin care: Corn has rich in antioxidants which gives enriches your skin. Cholesterol control: Corn helps to reduce the bad cholesterol in your body. Full of Vitamins and minerals-Iron, Copper and Magnesium Benefits of Red bell Pepper: This is another veggie, with enriched antioxidants, Vitamin C and other vitamins. Red bell pepper also helps to burn more categories and for improved eye-vision. The idea of this recipe sparked in my mind when my husband bought baby corn, red bell peppers along with other vegetables from market. I've come up with using baby corn, red bell pepper, corn flour and using sauces. I'm sure you all will like this Indo- Chinese recipe which contains a bowl of nutrition.

250 gm Baby Corn

1 Bell Pepper (any colour) -

2 Green Chillies -

2 tsp Ginger Garlic Paste -

2 tsp Soy Sauce -

2 tsp Tomato Sauce -

1 tsp Chilli Sauce -

1 tsp Corn flour -

1 cup water -

1 tsp Black Pepper Powder -

Salt to taste

Oil for seasoning

2.  In a mixing bowl, add corn flour, tomato sauce, chilli sauce, soy sauce, add water and stir well.

4.  Heat a pan or wok with oil, add ginger garlic paste and fry until the raw smell goes well.

5.  Add finely chopped green chillies, baby corn and fry for a minute.

6.  Sprinkle some salt and add chopped bell pepper, fry for sometime.

7.  Once the pepper and corn cooked, then add the broth which we prepared earlier.

8.  Adjust the consistency and spice level as you required.

9.  Finally add black pepper powder and cook in medium flame.

10.  Once the gravy becomes translucent, switch off the stove.

11.  Baby Corn -Pepper Gravy is ready to serve with chapathi, roti, parotta, pulka, fried rice or ghee rice.
