150 g S2 caster sugar

150 g almond flakes

40 g butter

6 egg whites

1 teaspoon honey

1.  Put sifted flour into a bowl, mix in caster sugar, mix in egg whites one at a time.

2.  Melt the butter to nut butter color.

3.  Add butter into the mix.

4.  Add honey, then almond flakes.

5.  Let dough rest for 30 minutes.

6.  Preheat oven to 190C/375F.

7.  On a greased sheet or Silpat mats put up with a spoon just heaps of the dough and spread it open with the back of the spoon to a diameter of 8cm/3inches.

8.  Bake in the preheated oven at 190C/375F° until golden brown, when done remove from oven and place them while still hot over a rounded object (empty wine bottle, rolling-pin or in the bakery supplies with a special mold for tulles curl) and let them stiffen when they are cool.
