A Sexy Summer Salad

A combination of wild rice and fresh spring or summer vegetables, makes for a simple and refreshing salad.

For the salad:

For the lettuce I used baby butter, mache and radicchio.

1 scoop wild rice

Sliced avocado

slices Mandarin orange

Sliced red and yellow bell peppers

whole Green and yellow beans, and raw

Greek feta cheese, crumbled

Candied walnuts

For the dressing:

Lemon curd

Sparkling sake, or sparkling juice

Splash of grapeseed oil

Splash of white balsamic vinegar

1.  Prepare rice per package instructions. You will need about 1/4th cup per salad.

2.  Allow rice to cool to room temperature or refrigeration until ready to use.

3.  Prepare the dressing by placing all ingredients in a bowl, whisking briskly until incorporated.

4.  Serve dressing on the side, or drizzled over salad.

Cooks' note:
Left over rice works perfectly here, or you can prepare a small amount of rice per salad.
