  • 2 tbsp chopped onion
  • 1 can mushrooms (3 to 4 ounces) stems and pieces
  • 1 tbsp chopped parsley

Directions:

Cook rice mic according to package directions

Melt butter in a small skillet and cook onion until soft

Drain and chop mushrooms and combine with cooked wild rice, onion, mushrooms and parsley

Mix well

Stuff lightly into neck cavity of 16 to 18 pound turkey

I absolutely love cabbage rolls and every time I eat this wonderful dish I think of Christmas. This is the vegan version of the Romanian traditional dish "sarmale" which usually contains ground pork/beef meat. Another thing that I love about this recipe is that it gets better with time! Yes! It gets better and tastier every time you re-heat it. Try it and let me know if you like ..

Real wild rice is not as glossy and black as the hybridized varieties, but it has a more delicate and complex flavor. It is not easy to find outside of Minnesota, Wisconsin, and environs, but when you do find it, cook it like this. (This method can be used for all wild rice, regardless of how wild it really is.)
