Ingredients:

  • 2tbsp olive oil, split
  • 1/2 c yellow onion, chopped
  • 1/2 head of cauliflower, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 tsp cloves
  • 1 can garbanzo beans
  • 1 cup vegetable broth
  • 2 large red potatoes, or 3 small, cut into small cubes

Directions:

In a large skillet or stock pot, add 1 tablespoon of olive oil on medium heat. Add onions and saute until translucent, about five minutes. Add cauliflower and, continue to cook until cauliflower begins to soften- another five minutes..

While cauliflower cooks... in a small sauce pan combine remaining olive oil, garlic, and spices. Heat and whisk until sauce is warm and combined. Add spice mixture, beans, zucchini, potatoes and vegetable broth to cauliflower. Continue to cook uncovered for 25-30 minutes, stirring occasionally. Liquid will reduce by half and vegetables will be cooked through. Remove from heat. Serve over rice or quinoa.

Spicy Vegetarian Chopsuey is cooked in Indo-Chinese style that contains vegetables in sauces and crispy fried noodles. There are different variations to this recipe. If you are a non-vegetarian you can serve fried-egg on top of it. This is one of my favorite as its tasty, spicy and love the crispy noodles when mixed with the sauce. It is truly amazing.
