Vegan Pistachio Brownie

To tell the truth I’m not a fan of vegan food. But sometimes my soul demands an experiment in my kitchen. I always look for the inspiration around myself. Yesterday my lovely husband asked me to cook something for his chief who has a special diet — never eat the dairy. Having waken up in the morning I’d decided that today would be a vegan day. That is why I looked through my social media like Instagram and Steller (my account name is julzhipa) and found amazing vegan brownies recipe by Wida_Foster. Thank you Wida! And of course having taken this recipe as a base of my next inventing process I tried to create something new. At first I changed the proportions of several ingredients because I don’t like to put a lot of sugar in the dessert (on the way to SUGAR FREE person). And this is the result of my job — Vegan Heaven (#vegan).

3/4 cup + 2 tbsp extra flour

1/3 cup powder sugar

2/3 cup cocoa powder

1/2 tsp baking powder

1/4 tsp salt

1/3 cup coconut oil

1/2 tbsp vanilla extract

1/2 cup warm water

2 tbsp lemon juice

2.  Mix all flour, sugar, cocoa, salt and baking powder

3.  Add vanilla extract and lemon juice, stir

4.  Add coconut oil and stir again

5.  Add warm water and whip until smooth then add several pistachios and stir

6.  Put the mix into the baking bowl and place it into the oven. Add the pistachios on the top of the mix.

7.  Bake for 20 minutes
