  • Pan drippings from roasted turkey
  • 2 tbsp to 1/4 cup melted butter
  • 1/4 cup all purpose flour

Directions:

Stir 1 cup broth into the pan drippings from roasted turkey in a roasting pan and stir. Pour the drippings into a measuring cup. Skim and reserve fat.

Add enough melted butter if necessary to the reserved fat to make 1/4 cup.

Add enough broth to the drippings to measure 2 cups of total liquid.

Pour the 1/4 cup fat into a saucepan and stir in flour.

Add broth mixture to flour mixture in saucepan and stir.

Cook and stir over medium heat until bubbly.

Season to taste with salt and pepper.

When buying a turkey buy at least a pound per guest and ideally a bit more so you will have leftovers. Unless you are stuffing your turkey count on roasting about 8 minutes per pound. This is faster than most recipes recommend, but keep in mind this is based on the turkey being at room temperature before it goes in the oven.
