untitled-2 1.  Grill the eggplant.

2.  When finish grilling, take off the skin.

3.  Mash the eggplant using fork and season it with salt and pepper.

4.  Heat oil in a frying pan, then when the oil is hot, beat an egg in a bowl, then dip the eggplant. Carefully slide eggplant into the pan. Lower heat to medium and cook until egg is cooked through. Transfer to a serving dish
