Ingredients:

  • 1/2 sweet potato
  • 6 ounces vanilla yogurt
  • 1/2 cup - 1 loosely packed spinach
  • 1-2 teaspoons almond butter
  • 1/4 inch piece of ginger, peeled and grated
  • * nutmeg and cinnamon, to taste
  • 3 ice cubes

Directions:

Microwave the sweet potato to soften it, then remove the skin and mash the flesh

Allow the potato flesh to cool before placing it in the blender with all of the ingredients up to the ice cubes.

Blend well, agitating with a spoon or spatula now and then if necessary.

Blend in the ice cubes in the end, taking care to crush them so that they’re fully incorporated.

Cooks' note:
Don't let the green color dissuade you! You don't taste spinach at all - but, if you're serving this to a pickier eater, you could try leaving out the greens (or just present it as a Mean Green smoothie or Monster Ooze for Halloween)!

I made this Sweet Potato Cupcakes two days ago and it was the best treat for everyone at home. This recipe was adapted from my favourite book Okashi, sweet treats made with love. It was a very healthy steamed cake, no eggs or butter required. So easy to make and adding sweet potato in the cupcakes make them extra soft and delicious. This is definitely a keeper and I'll make with purple sweet ..

This recipe was created using three ingredients given to me for my very first "Cooking Challenge." People can choose any three ingredients and I randomly choose which one I will try. I wasn't thrilled about trying this challenge out because I hate sweet potatoes, but I ended up LOVING the soup!
