A wholesome soup which has the sweetness and crunch of corn. A pleasant starter or a complete meal. My mom made it when I was young and is a part of Indo Chinese cuisine. A very simple soup to prepare.

Original Recipe Yield: 6 servings (6 Cups)
 

Ingredients:

  • 1 tsp Garlic : minced
  • 4-5 Scallions or green onions : white and green both parts, washed and chopped Keep them separate.
  • 3 tbsp Green bell pepper : chopped in small cubes
  • 1 tbsp Green beans : finely chopped in circles
  • 3 tbsp Carrots : grated
  • 1 cup Corn kernels :
  • 1 in Corn kernels processed food processor : cup
  • 6 cups Low sodium vegetable broth :
  • 1 tbsp White flour : mixed with 1/4 cup water Make sure no lumps.
  • 1 tsp Salt :
  • 1/4 tsp Black pepper:
  • 1 tsp Oil :
  • 1 tsp Soy sauce light : to taste

Directions:

Heat the oil in pan. Add garlic and chopped white part of scallions. Sauté for few seconds.

Add the corn kernels, bell peppers, beans and carrots and sauté for another minute.

Now add creamed corns with Broth. Add salt and black pepper to taste. Add white flour mix in it. Boil for 8-10 minutes. If you like add soy sauce.

Cooks' note:
Serve it warm.
