Sweet Asian Pork Tenderloin with Soy Glaze (Slow Cooker)

This is my favorite slow cooker dish for the moment. This recipe and picture comes from a blog that I follow called The Food Charlatan (link below). I made a couple of small changes to the recipe after making it several time, such as cutting out the ginger and reducing the amount of sugar. I It is so incredibly easy and develops such much flavor, I almost feel like it's cheating! I always know I've struck gold on a recipe when I get the comment "We should make this when we have people over" and this dish definitely does it! By adding the water to the slow cooker, the pork tenderloin stays extremely moist and doesn't dry out during the longer cooking time. The spice rub on it is a homemade Five Spice rub, so if you're really in a rush you could just use a pre-made version, although I always suggest making it yourself, especially because this recipe is so fast. Pork is also relatively good for you because it is a white meat with not much fat. I used it in a Bi Bim Bop dish (recipe coming soon) which was literally OUTSTANDING but it's great just by itself. The nice thing about making as much as this does it you can use it in a sandwich or have it for leftovers throughout the week. I guarantee once you try this recipe it will become one of your staple crock pot dishes, just like it has mine!
