Ingredients:

    Ingredients (Sung Choi Bao)
  • 500 g minced pork
  • 4 dried shitake mushrooms, rehydrated and finely chopped
  • 6 pcs water chestnuts, finely chopped
  • 1 stalk spring onion, finely chopped
  • 4 cloves garlic, minced
  • 1 long red chilli, chopped
  • 2 tbsp Chinese cooking wine
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 1 tsp cornstarch
  • salt
  • white pepper
  • head iceberg lettuce
  • Ingredients (Dipping Sauce)
  • 3 tbsp hoisin sauce
  • 1 tbsp warm water
  • 1/2 tsp chilli sauce

Directions:

Mix together Chinese cooking wine, soy sauce, oyster sauce, dark soy sauce, sugar, cornstarch, salt and white pepper.

In a bowl, put minced pork, chili, mushroom, water chestnuts and spring onions. Add the sauce mixture and mix well together. Set aside for about 15 minutes.

Heat up a wok then adds oil. Sauté garlic, add the pork mixture then stir fry until pork is cooked.

Place a big spoonful of mixture in the middle of a lettuce leaf, then do the rest for the remaining cooked pork, serve with sauce.

I love Welsh rarebit - it was a staple Saturday lunch for us growing up - so I was delighted when I found this recipe for pork rarebit and had to give it a go. Tuesdays are always a rush and I need to cook something quick - this took under 20 minutes so couldn't be more perfect.
