  • 1/4 cup olive oil
  • 1 cup pine nuts
  • 1 cup raisins
  • 8 cloves garlic, sliced
  • 2 pounds fresh baby spinach
  • 1 tsp shredded lemon peel
  • 3 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Directions:

In a large skillet heat 1 tbsp of the oil in medium heat. Add pine nuts, cook and stir for 5 minutes and put them in a bowl.

Add 1 tbsp of the oil to the skillet and heat over medium heat. Add 1/3 of the raisins, 1/3 of garlic, and 1/3 of spinach. Cook for 2 minutes, place them in a bowl and repeat the same process for two more times.

Add lemon peel, lemon juice, salt and pepper to the spinach mixture and toss gently.

This dish is one of our usual home-made meals, either taken with porridge or rice. Only difference this time: I’d added pine nuts & cut up some red & green Capsicums (bell peppers) to make flowers/leaves for decoration since it was for my Chinese New Year Reunion Dinner, & gave it a nice name to impress my guests.
