Roasted Butternut Squash and Apples

My favorite fall vegetable is Butternut Squash. Roasting brings out the rich sweet flavor and the addition of apples complements the cool Fall flavors.

With the roasted sage and squash tossed with parmesan and a sprinkling of hazelnuts, this recipe tastes like the holidays. The pasta is all tossed together in a pan to break down the squash and make its own sauce. This is a recipe from thekitchn.com, but you can find my post about it at: http://themoveablefeasts.wordpress.com/2012/11/07/pasta-with-roasted-butternut-squash-sage-and-parmesan/

A dinner created for a client who wanted a healthy yet flavorful meal. Just a few ingredients make this meal a snap to put together. So easy just prep everything in the morning then when its time for dinner just pop it all in the oven. 35 minutes later you have pure YUM!!!!!!!!!!!!!!

The poblanos are definitely the star of this dish, but all together it becomes a perfect meal or side dish. The sweetness of the butternut squash, roasted with earthy thyme and finally paprika to bring the smokiness full circle is a home run. Similar recipes for veggie bakes that I found called for heavy cream, buttermilk, sour cream, etc. but I decided to use greek yogurt to make it healthier. ..
