Rice cooked in sweetened milk with nuts. Generally prepared at festivals and special occasions in India.

1 litre full fat organic milk

1 cup basmati rice

6 tablespoon sugar or as required

6 Green Cardamoms elaichi, powdered

pinch A of saffron/kesar

15-20 Almonds/badam, blanched and sliced

12-15 cashews/kaju, Chopped

1 tablespoon golden raisins

rice-kheer-5376.png 1.  * Wash rice and soak it in water for 30 minutes, keep aside

2.  * In a pan boil milk, add cardamom powder and pinch of saffron

3.  * Drain the rice and add it to boiling milk

4.  * Keep stirring and scraping the sides of the pan

5.  * Cook till the rice grains are almost done

6.  * Add Sugar, Almonds and cashews to the boiling milk

7.  * Simmer and cook till rice completely done

8.  * Finally add raisins

9.  * Serve hot or chilled, as required garnished with raisins or pistachios

Cooks' note:
** You can also cook it with jaggery, add jaggery instead of sugar
