Cake batter baked inside an ice cream cone and topped with frosting. I use rainbow colors to create a "galaxy" look.

  • 1 box of store bought cake mix or your favorite homemade recipe
  • gel food colors (red, blue, green, yellow, violet)
  • 12 ice cream cones

Directions:

Make your cake mix recipe.

Separate the batter into five bowls.

Add one of each of the colors to the frosting.

Mix the frosting.

Layer the colors into the ice cream cones.

Bake for 15-20 minutes or as long as your mix says to bake them. (Mine took 20 minutes at 350 degrees)

Allow to cool before frosting.

For the frosting:

Make your own frosting or use store bought.

Separate the colors just as you did with the batter.

Then take a large wilton star tip and a gallon sized ziploc bag and put each of the colors on the sides of the bag. That way when you pipe your frosting you will get different colors!

Cooks' note:
You will probably have some left over batter and/or frosting. Feel free to make regular cupcakes out of those or use more ice cream cones. The texture of the cone will get a stale taste to it, but children usually won't mind the taste as much as adults. Bake as recommended on your cake mix box or homemade recipe. Don’t fill your batter to the top of the cone. Stop at the first ridge of the cone.If you are using colored batter, the first color you use will be the most prominent in the cone, especially if you slice it open for everyone to see.

Yesterday I really craved for some delicious cupcakes but in the same time I wanted something refreshing and light. That’s when the idea hit me and I made these ice cream chocolate cupcakes. I didn’t actually use cocoa or chocolate but instead I used something even healthier, carob powder! Try them! It takes less than 10 minutes to make these icy chocolate raw cupcakes.
