One-Pot Cheesy Chick'n Enchilada Pasta

Added by: on Mar 30th, 2016
I've been seeing a lot of one-pot dishes on the web lately. I saw this one and wanted to make it vegan. This was very tasty and made a lot. The leftovers reheated very well. This will makes 6-8 servings.

In a colander, rinse and drained the uncooked pasta. Om a large saucepan, mix pasta, tomatoes, enchilada sauce, water and taco seasoning. Bring to a boil; reduce heat and cook until pasta is done. Refer to the pasta box to get an idea, my elbows only needed about 10 minutes. Do NOT drain. Stir in beans, corn and chicken; return to simmering. Remove from heat, stir in cheese. Serve with garnishes of choice. Enjoy!!

Another one-pot wonder, the casserole has a spot in my heart, for quick, easy and filling. I also love the way leftovers reheat so easily. I found this recipe here and made it vegan using my favorite go to vegan substitutes.

It's been colder the last few weeks and we've been into soups. I made this a couple of weeks ago and will probably make it again for our cold spell this week. I spotted this over at Copycat recipes. It is supposed to be a knock off of Chili's soup by the same name. I made it vegan and it is amazing. I don't know if it taste like their version but this one is definitely a make ..
