Spread the passion fruit mousse over the bottom of a prebaked tart shell.

Arrange the berries on top in concentric circles and brush with glaze.

Cooks' note:
Soak 1 teaspoon gelatin in 1 tablespoon cold water for 5 minutes. Add 2 tablespoons cream and heat the mixture in the microwave until the gelatin dissolves, about 5 seconds. Beat 3/4 cup cream to medium peaks and beat in the gelatin mixture and 1/2 cup passion fruit curd.

To turn a fruit curd into a fruit mousse, fold in whipped cream. If you're not using the mousse right away and serving it within a day add gelatin as we do here to keep it from separating. Note: Whenever you combine tropical fruit with gelatin, bring the tropical fruit puree to a simmer before you add the gelatin. This kills protease enzymes that would otherwise interfere with the gelatin ..

This tart is filled with passion fruit curd and topped with meringue stars. The curd base can also be used for berries and other fruits - just skip the meringue and arrange the fruit over the curd.
