Mexican Pizza

One of my favourite things about my trip to Mexico last year was all the spice and colour on my plate. The food was like nothing I had ever had before. Every day I would try something new and each time it was so beautiful I almost did not want to eat it. But of course I did. I have always loved avocados but I really was lost on how to add them to a recipe. Then I visited Mexico and the recipes always included them. Such a tasty combination! If you have not yet tried an avocado, you should. They are so good for you and really add a new dimension to your foods

small corn tortillas

Shredded Rotisserie chicken

1 can enchilada sauce

1 can refried beans

1 red onion, diced

1 tomato, diced

1 cup grated cheese

1 sliced avocado

Salt to taste

mexican-pizza-6087.png 1.  Lay out the corn tortillas on a baking sheet.

2.  Spread a tablespoon of refried beans on each tortilla

3.  Spread a tablespoon of enchilada sauce over the refried beans

4.  Add your toppings: chicken, cheese, tomatoes, and onions

5.  Broil on High for about 5 minutes until the cheese is melted

6.  Place sliced avocado on top of each pizza

7.  Slice it like a pizza and serve it with sliced avocado

8.  Sprinkle with salt to taste

9.  Slice like a pizza and enjoy.
