This parfait is deceptively healthy, which is what makes it so great. It has all the benefits of whole grains, non-fat dairy, and fresh fruit, yet you'd never know in tasting it that it wasn't a decadent, high-fat, high-sugar dessert. Enjoy this anytime during the day, and stop feeling .. more >

Directions:

1

Crush the cereal (I just used the back of my spoon, but for a faster technique place the cereal in a ziplock bag and mash with a rolling pin or the bottom of a frying pan), then place the cereal crumbles in the bottom of a bowl.

2

Scoop out the yogurt from its container and gently smooth over the cereal crumbles.

3

Top with fresh blueberries.

In this version, a hard meringue shell replaces the traditional pie crust and an especially tangy lemon curd is used as a counterpoint to the sweet crust and soft meringue topping. Whipped cream is added last. The delicate interplay of flavors and textures - the crunch ..
