Ingredients:

  • 5 Eggs
  • 5 teaspoons of baking powder
  • 5 tablespoons of sugar
  • 5 large tablespoons of Crisco
  • 2 1/2 cups of all purpose unbleached flour (may have to use more depending on dough/for medium dough, softened)
  • Lemon Zest of one lemon
  • pinch of salt

Directions:

Mix in bowl, eggs, sugar, Crisco and lemon zest.

Mix together and blend baking powder, flour and a pinch of salt with eggs, sugar and Crisco. Form quarter sized balls of dough. Put dough on board and roll long thin strips. Take strip and put it around your fingers to form a rope and twist into a simple knot shape (tuck the ends under) Bake at 350 degrees on lightly greased or non-stick baking sheet for 14-20 minutes.

Cooks' note:
The cookie glaze or icing:
2 box Squeeze the juice of lemons into 1/2 a of powdered sugar. Mix until smooth Dip cooled cookies into glaze Place on rack and dust with rainbow sprinkles.

Depending on the size of the cookie that you make, will determine the amount of cookies this recipe yields.

recently found that lemon and chocolate goes well together,so I discovered this cake and it was a huge blast..I made this cake for my sister’s friends birthday...I didn’t get a chance to look at the inside of the cake,since it is made for a birthday..I told my sister to take a picture of the cake after it has been cut,but she missed that..So sorry for that,but I can imagine how the cake will ..

These lemony and buttery cookies are light and luxuriously melts in the mouth because of cornstarch. I find these absolutely delightful munched and chased with a cup of tea, or made into a cookie sherbet sandwich for a cool summer sweet snack. :)
