Ingredients:

  • 2 T olive oil
  • 1 green pepper, chopped
  • 1 jalapeño, seeded and finely chopped
  • 2 cloves - 3 garlic, minced
  • 1 small yellow onion
  • 2 T chipotle chili powder
  • 1 t coriander
  • 1 t cumin
  • 1 t basil
  • 1/4 t cayenne
  • 1 can 16oz diced tomatoes with juices
  • 1 can 16oz tomato sauce
  • 1 can 16oz kidney beans, rinsed and drained
  • 1 can 16oz black beans, rinsed and drained
  • 1 can 16oz pinto beans, rinsed and drained
  • 1 small bag of frozen corn
  • 12 oz Bud Light
  • 1 T sugar
  • 3/4 t Franks hot sauce
  • 1 t vegan Worcestershire sauce
  • salt and pepper to taste
  • Fresh or dried parsley to garnish

Directions:

Add the olive oil to a large dutch-oven over medium heat. Add the green pepper, jalapeño, garlic, onion and seasonings. Cook and stir until onions are translucent, about 5 minutes.

Add the remaining ingredients and bring to a boil. Turn heat to medium-low and let simmer for about 30 minutes.

Cooks' note:
If you already have too much hair on your chest, feel free to dial down the heat. Your children will appreciate it!

This chili was delicious, thick and full of flavor. The pumpkin was just a sutle undertone and didn't overpower the chili at all. This chili is also very mild flavored and can be spiced up with some Franks hot sauce or the addition of chopped jalapenos. I served this with Green Chili Cornbread.
