Preheat oven to 400 degrees F. Chop and remove stems from mushrooms. In a small bowl combine 1 tbsp of oil and 1/4 tsp of salt. Brush the mixture on the mushroom caps and arrange them in a baking pan.
For filling in a large skillet heat the remaining 1 tbsp oil and butter over medium heat. Add the mushroom stems, shallot, garlic, thyme and 1/2 tsp of salt. Cook and stir for 8-10 minutes.
Add sherry and continue stirring. Let it cool and then stir in panko, chives, lemon bites, cheese and pine nuts.
Fill the mushroom caps with the filling and bake for 15 minutes.
