Chicago is already moving towards fall. I hope this isn't true but considering a light jacket is needed in the morning and night, I fear it might be. And although I'm not ready to see the summer leave yet, I do love fall. There is something about the crisp smell in the air, the leaves .. more >

  • 2 tbsp butter
  • 6 medium white onions, sliced
  • 80 oz beef broth
  • * 1 cup water - optional
  • 1 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 6 tbsp grated parmesan cheese
  • 1 french bread baguette
  • 8 slices Swiss cheese

Heat large soup pot until butter is melted and add sliced onions


Stir for 15-10 minutes or until onions become translucent


Add in beef broth and spices and bring to a boil. Reduce heat and simmer uncovered for 1 hour. Add grated parmesan toward the end of the hour and stir in


After the soup has been simmering an hour, add water, a little at a time, until you reach desired consistency. For me this is about 1 cup


Split soup up into oven safe bowls, and add a piece or two of french bread to top of soup. Layer over the bread one piece of Swiss cheese.


Place bowls in the oven and broil for several minutes until cheese starts to bubble and brown.


Take out carefully as bowl are hot and enjoy!

Onion soup recipes usually call for beef broth, which puts some of us off or has us reaching for a can.
