  • 2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 8-12 vanilla wafers

Directions:

Beat cream cheese and sugar on medium speed until light and fluffy.

Add eggs, vanilla and almond extracts and beat well.

Place 12 cupcake liners in a cupcake pan. Crumble vanilla wafers and place on the bottom of each cupcake liner. Spoon batter into each liner until 2/3 full.

Bake at 325 degrees for 20-25 minutes, until edges are slightly browned. Cupcakes will be puffy when first taken out of the oven but will deflate within a few minutes.

Cool and top with fruit, coconut, chocolate, lemon curd, jam, etc.

Sprinkles are all the rage. Funfetti can be found in cakes, cupcakes, cheesecake, and whoopie pies. What is it that makes it so much fun? Certainly it's the colors. But I also think it's the simplicity. Sprinkled on a white swirl of frosting it's the perfect pop of color.
