Ingredients:

    Crepe
  • 1 cup whole wheat flour
  • 1 large egg beaten
  • 1 1/4 cup almond milk
  • 5 ounce frozen spinach, thawed, drained and chopped
  • 2 tsp veggie oil
  • Filling
  • 12 ounce white crab meat (can use can or fresh)
  • 1 tsp mild curry powder (optional depending on your taste preference)
  • 1 tbsp reduced-calorie mayonnaise
  • 2 tbsp low-fat plain yogurt

Directions:

Whisk flour and egg, add in milk continue to whisk. Blend in spinach, set aside.

For filling combine all the filling ingredients in bowl.

Whisk crepe batter. Lightly cover pan with oil. Pour batter onto pan to thinly coat. Cook 1-2 minutes, flip and cook 1 minute until golden. Place on plate.

Add crab filling on top of crab, fold.

This artichoke spinach & crab dip is so creamy and delicious. There is just the right amount of crab so it doesn't overpower the other ingredients. The tomato on top gives a little extra burst of sweetness to each bite.

The ideal crab cake is made of big chunks of lump crab meat held together with minimal bread crumbs and egg. While good-quality lump crab meat, especially jumbo grade, has very little shell and cartilage, you should pick through it to be sure. To spot the cartilage, spread the meat on a sheet pan and slide it under the broiler for just a few seconds. The cartilage will turn red.
