Ingredients:

  • 25 g All purpose flour, sifted
  • 125 g Semolina, Polenta
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 Green chilli pepper, chopped with seeds removed
  • 4 Spring onions finely chopped
  • 2 Eggs
  • 140 ml Sour cream
  • 100 ml Olive oil

Directions:

Mix all the dry ingredients i.e. flour, semolina, baking powder, salt, chilli pepper, spring onions in a large bowl.

In a separate bowl, beat the eggs with sour cream and olive oil. Mix this well with the dry ingredients.

Pour this batter into a square form or a circular form lined with parchment paper and bake it in a preheated oven at 200 °C for 25-30 min. until lightly brown.

Cut into square shapes and serve as an appetizer or a snack.

Cooks' note:
Instead of olive oil, sunflower oil can be used in its place.

Something quick & healthy after all the dishes with loaded calories that I have posted this week. I love eating salads/steamed veggies. The secret to fish broth is using fresh bones and heads and cooking them right away. The heads and bones are soaked to remove traces of blood, which turn the broth gray. Don’t cook fish broth more than 20 minutes or it will taste fishy instead of having a gentle sealike quality.
