I just made this chicken sopas because it's raining almost the whole day, and I love to sip hot and delicious chicken soup.

Ingredients:

  • 4 cups macaroni
  • 1 whole chicken meat, diced
  • 4 regular hotdog, sliced crosswise
  • 1/4 cabbage shredded
  • 1/2 head garlic, minced
  • 1 medium size onion, chopped
  • 1 cup malungay leaves
  • 2 chicken bullion
  • 1/4 cup evaporated milk
  • 1 tablespoon cooking oil
  • * Salt and pepper

Directions:

In a casserole boil chicken meat until tender.

Remove chicken from casserole set aside broth.

Dice chicken meat.

In same casserole sauté garlic, onion, add chicken meat cook for 2-5 minutes.

Add chicken bullion stir cook for another 1-3 minutes and the broth, let boil.

Add the macaroni and simmer for 30-45 minutes or until soft and tender.

Add hotdog and vegetables and simmer for another 3-5 minutes.

Season with salt and pepper. Add the evaporated milk and cook for another 2-5 minutes.

Serve immediately.

These are very similar ta the chicken "yakitori" that are so popular in Japanese restaurants.

The boiled meat would typically be sliced and eaten with either mayonnaise, mustard fruits or green sauce, or in a salad, and then the brodo would either be served separately or kept for risotto. Whenever you make stock, remember how important it is to the finished dish — the rule is that a good-quality chicken makes a good-quality stock, so buy the best you can find.
