  • 1 packet (400 g) McVitie's Digestive Biscuits
  • 4 oz of butter
  • 1 pack of gelatin, lemon flavor
  • 400 g of Philadelphia Cream Cheese
  • 1 tin of evaporated milk
  • 100 ml Baileys

Directions:

Crumble biscuits in a blender.

Melt butter.

Put the butter and biscuits in a blender, make into a dough.

Put the dough in a cake tin (spring-cake), squish it firm to the bottom

Meld your jelly in a ¼ pint of water in your microwave.

Take the cheese and put it in the blender with the melded jelly and the evaporated milk, whisk until a nice mass. To add some more flavor add Baileys to your taste.

Put this on top of the dough until the top of the spring-cake.

Put everything in the fridge for at least 5hrs, even better for 24hrs.

Lemon is the perfect flavour for cheesecake. I'm sure no one can resist this extremely light and refreshing hint of lemon dessert. This is also perfect to serve with a cup of mint tea.
