Cheese Straws

Once you've made puff pastry dough, you can throw together these straws in just a few minutes. If you have puff pastry trimmings, this is a perfect use for them. If you're working in a hot kitchen, make the cheese straws before you preheat the oven and keep them in the freezer until you are ready to bake them.

1 1/2 ounces firm hard cheese (such as Parmigiano-Reggiano or aged Gouda)

1 tablespoon paprika (or Spanish pimenton)

1 3/4 pounds dough (classic puff pastry dough or quick puff pastry dough or trimmings)

881ef6fc184383c25bda88c2b920d7a00cdf8aef.jpg 1.  Spread over the cheese mixture so it completely covers the rectangle. Roll over the rectangle to get the cheese to stick to the dough.

2.  Fold the rectangle in hall and press down on it to hold it together.

3.  Roll the rectangle out to its original dimensions - 12 by 16 inches - and trim the sides. Cut the rectangle into 1/2 by 12-inch strips.

4.  With your hands at each end, twist in opposite directions to make spirals. Bake until pale brown.
