Traditional Southern pralines use rich buttermilk to achieve a fudgy texture. And, no matter how you pronounce them ("prah-leen" or "pray-leen") everyone agrees that these little treats are delicious.

Directions:

Mix baking soda into the buttermilk.

In a large saucepan, bring the buttermilk -soda mixture and the sugar to a boil. Continue to cook until the mixture becomes a deep amber color and large bubbles begin to form (this is the softball stage or 234 degrees).

Turn off the heat and whisk in the butter and vanilla.

Fold in pecans and continue to stir until slightly creamy.

Working quickly before the sugar begins to set, drop spoonfuls of the pecan mixture onto a parchment lined baking sheet. Let cool completely before removing from parchment. Store in an airtight container.

Cooks' note:
These little pecan candies take just a little time to prepare and cool fairly quickly (about 15 minutes) and are then ready to eat!
