  • 6 bread rolls, or 1 1/2 baguette (cut into 2.5-3 cm (1-1.5 inches) thick slices)
  • 12 apples, grated finely with the skin
  • 2 tsp cinnamon
  • 6 tbsp cane sugar
  • 2 tsp vanilla sugar
  • 250 g lump curd (or cottage cheese)
  • 100 g raisins, rinsed with hot water
  • 450 ml whole milk
  • 2 tbsp flour, fine
  • 3 eggs
  • 2 egg whites
  • 4 tbsp cane sugar
  • 2 tbsp vegetable oil (for greasing the baking dish)
  • 2 tbsp breadcrumbs
  • pinch of salt
  • pinch of nutmeg

Grease a round fuser bowl (about 22 cm - 9 inches in diameter), with a little oil and sprinkle with breadcrumbs, also on the sides.


Whisk eggs in milk; add the flour, salt and 4 tbsp brown sugar.


Dip bread roll slices (1/3 amount) in milk with eggs and make a layer on the bottom of the bowl, then spread ½ amount of grated apples, sprinkle with 1 tsp of cinnamon, a pinch of nutmeg, 1 tbsp of brown sugar, ½ amount of curd and raisins, sprinkle with 1 tsp vanilla sugar.


Repeat once more and finish with a layer of roll slices.


Cover the bowl with lid and place in a preheated oven at 180 0C (356 0F) for 40 min, until the egg mixture is solid.


Beat 2 egg whites into firm snow, add 4 tbsp of white sugar and spread the snow on baked pie, put back in the oven, opened, and bake for about 10 to 15 min. until golden brown.


Let cool at room temperature, puffy egg whites will deflate a little, then cut as a cake and serve as a dessert, or as a main dish.
