Ingredients:

  • 6 tablespoons butter (melted, plus more for the muffin cups)
  • 2 ripe bananas
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 eggs
  • 2 egg whites
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2/3 cup toasted and coarsely chopped walnuts

Use a pastry cutter or potato mashor to mash the bananas.

Whisk together the liquid ingredients, then whisk in the brown and white sugars.

Stir the sugar mixture into the flour mixture, then fold in the walnuts and bananas.

Use a 3-ounce ice cream scoop to transfer the dough into the muffin cups. Bake.

Cooks' note:
Preheat the oven to 350°F. Butter the muffin cups. Mash the bananas using a pastry cutter or potato masher. In a large bowl, whisk together the flour, salt, baking soda, and baking powder.
In a bowl, combine the butter, eggs, egg whites, granulated sugar, and brown sugar, then pour the mixture over the flour mixture. Add the nuts and bananas. Fold the mixture just long enough to moisten the dry ingredients. Scoop the mixture into the muffin cups.
Bake for about 25 minutes, or until a toothpick comes out clean. Turn the muffins out on a rack to cool.

I served this over the Holidays for a group of ladies and they loved it! I am not a huge cranberry lover, but I loved it as well and of course the color is wonderful not only for Christmas but for the upcoming Valentine's Day. So go ahead, make some for your sweetie.

Talk about a winner and nutritious too! I served these at a recent friendly get-together and the ladies went nuts for them I tell ya! So I thought I would share so you can go nuts, too!!
