This soup is thick and loaded with chunks of potato. And of course it must have a sprinkling of green onions and bacon.

2-1/2 cups sliced leeks (white & light green parts), well rinsed

2 cloves garlic minced

Salt & freshly ground pepper to taste

2 cups chicken broth

2 cups water

4 slices bacon, cut into 1/2" pieces

1/2 cup milk

1/2 cup sour cream

1 cup grated Sharp Cheddar Cheese

2 tablespoons sliced green onions or chives

(I also diced a carrot and some celery)
