Ingredients:

  • 2 1/2 cups regular rolled oats
  • 1/4 cup oat bran
  • 1/4 cup steel cut oats
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 egg, lightly beaten
  • 2 cups milk
  • 1/3 cup applesauce
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup vegetable oil
  • 2 cups fresh fruit (blueberries, pears or apples, chopped)
  • 1 cooking spray
  • Plain low fat yogurt

Directions:

In a large bowl mix the rolled oats, oat bran, steel cut oats, baking powder, salt and cinnamon.

In a medium bowl combine the egg, milk, applesauce, granulated sugar, brown sugar, ad oil. Add the egg mixture to the oat mixture and stir well. Throw the fruit in mix well, cover and let it chill for 12-24 hours.

Preheat oven to 350 degree F. Coat 12 custard cups with the cooking spray. Divide the oat mixture among ramekins into a baking dish.

Bake for 35 minutes for ramekins, and 45 minutes for baking dish.

Serve warm with yogurt.

These bring back memories of my early baking days in my parent's kitchen. I have no idea how old I was when I made these, and I think I only made them once.
