Ingredients:

  • 1/2 lb lean ground turkey
  • 1 clove garlic, minced
  • 1/2 tsp minced ginger
  • 1 tablespoon generous soy sauce
  • 1/4 tsp agave syrup
  • 1 cup Minute Ready Rice brown rice
  • 1 green onion, sliced thinly
  • 3 baby carrots, diced
  • 1 sweet mini bell pepper, diced
  • 1 rib celery, diced
  • 3 small radishes, diced
  • 1/2 tsp dried cilantro (or 1 tsp fresh cilantro, minced)
  • 8 leaves butter lettuce washed and dried
  • Bottled Teriyaki sauce of your choice, for dipping

Directions:

In a skillet lightly greased with nonstick cooking spray, cook the ground turkey over medium heat until brown and fully cooked through, about 10 minutes.

Remove from heat and add remaining ingredients (up to lettuce leaves). Stir to combine.

Spoon 1/8th of the meat mixture into each lettuce cup.

Serve with a cup of Teriyaki sauce for dipping.

Cooks' note:
Four of these lettuce cups makes a nicely-sized serving, but you may wish to serve fewer if including other dishes in the meal (such as soup, noodles, salad, etc.).

There is this AMAZING tofu at all of the Farmer's Markets around me. It's made by a company called Phoenix Bean (link to website) and they sell all different types of tofu products.
