This fat-free quick bread is warm, comforting, and definitely delicious. It's great served with some yogurt for breakfast!

Original Recipe Yield: 10-12 servings


  • 1 cup spelt flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oats, ground into a fine flour (oat flour)
  • 1/8 tsp nutmeg
  • pinch cloves
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 leaves the of bag apple cinnamon tea (caffeine free)
  • 1/3 cup egg whites (2)
  • 1/2 cup + 2 tbsp applesauce
  • 1/2 tsp vanilla
  • 1/4 cup molasses
  • 2/3 cup apple cider
  • 1 small medium/large apple, cut into chunks

Preheat oven to 350F.


In a large bowl, combine first 10 ingredients. Whisk together.


Add in egg whites, applesauce, vanilla, molasses, and apple cider, and mix until a smooth batter forms (it will be runny).


Fold in apple chunks.


Pour batter into a greased loaf pan and bake in preheated oven for 30 minutes, or until a toothpick comes out clean. Let cool completely before slicing or removing from pan.

Cooks' note:
Notice that it says the leaves of 1 bag tea in the recipe. This literally means to cut open the tea bag and pour the contents into the batter. It has a ton of flavor!

I use my grill to do all kinds of baking. I have made cakes, cobblers, pies, even souffl├ęs! Think of the grill as an outdoor oven. When you are using indirect heat, with the lid closed, you can bake virtually anything that would cook in an oven.

I don't usually eat baked goodies because I'm not a huge fan of flour-based desserts but this pie is definitely a must-try! It is just perfect for this season and you'll love how all flavors blend together. Also, you can substitute apples with any other fruit you like; I also tried it with sour cherries and peaches and it's just as great. I will not make a habit from eating ..
