  • 3 Potato (cut into wedges)
  • 10 Kerala papadam - papads ( cut into triangles)
  • 15 Shallots (chopped)
  • 1tsp Ginger paste -
  • 2 green chilly (chopped)
  • 2 tsp Red chilly powder -
  • 1/2 tsp Turmeric powder -
  • pinch Hing/ asafoetida
  • 1 tsp Coriander powder -
  • Salt - to taste
  • 1 tsp Mustard seed -
  • Oil for frying potato and papadam
  • 3 tsp Coconut oil - (for tempering)

Deep fry the potato wedges in oil with a pinch of salt and set aside in paper towel.


Fry the papadam in oil and set aside in paper towel.


Heat the coconut oil in a pan and splutter mustard seeds in it.


Add hing, green chilies and ginger paste and mix well.


Add the chopped shallots and fry till golden brown.


Add the red chilly powder, turmeric powder, coriander powder and salt and mix well.


Add the potatoes and papadam and toss well.
